Cilantro Dressing for Mexican Salad
Whip this tangy dressing up in minutes.
Drizzle on to your favourite bowl of greens topped with a cooled Mexican Fiesta Bowl for a complete meal.
Ingredients
1 cup fresh cilantro stems and leaves
½ jalapeno (seeds removed unless you like it spicy)
1 clove garlic
2 teaspoons fresh lime juice and zest
1 teaspoon agave or maple syrup
¼ cup olive oil
Salt and pepper to taste
Dash of cumin
Instructions
Mix it all up in a food processor. So fresh and good. For a creamy version add ½ avocado. Even better!
