Simple Vinaigrette
Simple Vinaigrette:
1/2 tablespoon shallot or mild red onion, finely minced
1/2 tablespoon mustard (whole grain or dijon)
Juice of 1 lemon
1/2 tablespoon white, red wine, or balsamic vinegar
1/3 to 1/2 cup high-quality olive oil
Splash of sweetener of your choice (agave, maple syrup etc.)
Freshly ground pepper and salt (to taste)
Directions: Shake all of the ingredients in a screw-top jar and serve
