Vegan, Gluten-Free Stuffing
Ingredients:
1 loaf of grainy bread (we use gluten free)
1 package vegan sausage crumble or removed from casing. (We used Tmrw Foods sausage)
½ red onion finely chopped
2 stalks celery finely chopped
1 apple grated
½ cup pumpkin seeds and/or sunflower seeds
1T ground sage
2 t ground savory
2 t salt
1 t pepper
3 T vegan butter
3 T olive oil
1 T oil for sauteing veg
1 cup veg broth
DIRECTIONS:
Cut up bread in cubes, toss in 3 T oil and spices (sage, savory, salt, pepper) to cover.
Place on cookie sheet with parchment paper and bake at 275 for 30 minutes to partially dry out.
Panfry onions and celery in 1 T oil until soft, add vegan sausage and cook well then place all in large bowl, add breadcrumbs, 1 cup broth, apple and seeds. Mix well.
Place in baking dish and top with a few dollops of vegan butter then cover with foil.
Bake for 40 Min at 350.
Eat with ALL the Yummy sides and if you are lucky enough to get your hands on some Boosh Good Gravy…live it up!!
