We have kept this recipe simple, but you can also add in some other vegetables like mushrooms or chopped broccoli for some extra crunch and flavour.

Ingredients

  • Extra Virgin Olive oil (or any vegetable cooking oil will do)

  • Onion, diced

  • Broccoli, finely chopped (optional)

  • Boosh Good Gravy

  • Non-dairy milk of choice (coconut milk or cream works well)

  • Crackers or buns

Directions

Heat a small amount of oil in a medium sized pot; add onions and sauté for 2 or 3 minutes then add broccoli. Sauté for another 4 minutes. Pour in 2 cups of mushroom gravy and continue to cook over medium heat for 5 minutes. Add a cup of milk or cream, stir to combine and cook over medium heat for 5 to 7 minutes. Salt and pepper to taste and serve immediately with your favourite crackers or buns.
