Mushroom Soup
When in a hurry for some quick comfort, nothing beats a warm bowl of creamy mushroom soup.
We have kept this recipe simple, but you can also add in some other vegetables like mushrooms or chopped broccoli for some extra crunch and flavour.
Ingredients
Extra Virgin Olive oil (or any vegetable cooking oil will do)
Onion, diced
Broccoli, finely chopped (optional)
Boosh Good Gravy
Non-dairy milk of choice (coconut milk or cream works well)
Crackers or buns
Directions
Heat a small amount of oil in a medium sized pot; add onions and sauté for 2 or 3 minutes then add broccoli. Sauté for another 4 minutes. Pour in 2 cups of mushroom gravy and continue to cook over medium heat for 5 minutes. Add a cup of milk or cream, stir to combine and cook over medium heat for 5 to 7 minutes. Salt and pepper to taste and serve immediately with your favourite crackers or buns.
